If you don't have a merchant account with a Bank, you can use PayPal. This is often the most viable for small business that don't use credit cards often.
For your customers to pay via Google Pay or Apple Pay you will need a payment gateway (Merchant account) from either a Bank - or via PayPal. The Banks and PayPal will hit you with a merchant fee for a couple percent. (Google does not charge).
You customer does not get charged extra. The fee will come out of the transaction sent to you as the Merchant.

Assuming a domestic Australian payment in AUD and PayPal’s published standard rates: (PayPal Australia fees)
